Figs with savoury cashew butter

A vegan take on the classic figs with goats cheese. Instead of a sweet ball of figs and dates try fresh dates split in half and spread with a savory miso cashew butter. If you are particularly lucky you might find some smoked cashew butter around, which would be particularly good.

Ingredients:

2 or 3 tablespoons hot water
100g of cashew
1 teaspoon of sweet white miso
1 teaspoon maple syrup
1 teaspoon of lemon zest
1 teaspoon lemon juice
generous grind of black pepper
Smoked paprika to garnish

Method:

  1. Blitz the cashews in a food processor.

  2. Dissolve the miso in the warm water and then combine with the rest of the ingredients and whip it till it's light, more like a mousse than a heavy butter. Taste for balance, and add more lemon or miso as needed until it has a nice balance.

  3. Split your figs or fresh dates in half and butter lightly with your savory cashew sauce. Sprinkle with smoked paprika.
