500g of Halloumi
1 Red Pepper
1 Yellow Pepper
- Cut your courgettes into strips. De-seed the peppers, and cut them into strips.
- Add a drizzle of olive oil to a griddle pan, once hot add the chopped veggies and grill until nicely charred, then remove from the pan.
- Wipe the pan clean, cut the halloumi into slices. Place slices on griddle pan for 3 mins on each side.
- Warm up the pittas and then cut in half to form a little pocket. Fill the pitta pockets with the grilled veggies, a slice or two of halloumi and a small handful of rocket. Drizzle over a small amount of pesto and enjoy!
