Chai tea is a flavoured tea made by brewing black tea with a mix of aromatic spices and herbs. It's a staple in India and is usually drunk sweet and milky. In the UK chai lattes sold in coffee shops are often very sweet and high in sugar, and you can't taste the individual spices. Make your own version with our easy to follow recipe.
Time: 20 minutes
600ml milk or unsweetened almond milk
½ inch piece of ginger, cut in 2 slices
1 cinnamon stick, slightly crushed
8 cardamon pods, slightly crushed
1 tsp loose leaf black tea
2 tbsp. honey or maple syrup
Optional – 1 tsp vanilla extract, pinch of cayenne pepper
In a pan on a medium heat, add the milk, water, and spices, and simmer gently for 10 minutes.
Add the tea and sweetener of choice and simmer for a further 5 minutes.
- Take off the heat and leave to cool for 5 minutes, before adding a handful of ice cubes. Enjoy straight away or store in the fridge for a few days.
