Baby Carrots are cute but just half larger carrots if that suits.
200mls of orange juice
salt to taste
3 star anise
1) You need a frying pan with deep sides for this, and butter works well for emulsifying the orange juice but to keep it vegan use oil.
2) Turn your carrots and star anise in warmed butter or oil till they are coated and salt well. Tip in the orange juice and turn the heat right up till the orange juice starts to boil, then turn down to a simmer. Every now and then shake the pan or flip the carrots and keep an eye. Everyone's pan is different, carrots and different and sometimes you might need to add more liquid to finish cooking the carrots so add a splash of water if need be.
3) If you have a sweet tooth a little honey will add to the glaze and take the edge off the orange if it is a little bitter.
4) These orange glazed carrots reheat well.
