Raw chocolate & date brownie balls

Mid-afternoon when im craving something sweet and chocolatey, these Raw Chocolate Brownie Balls are my go-to snack. They are quick and easy to make and only require a few ingredients. The walnuts are ground to give the brownies a flour-like consistency, whilst the medjool dates and cacao powder combine to create a wonderful chocolatey flavour.

The walnuts are a great source of omega-3's which help to keep our heart healthy and the cacao powder is rich in flavonoids which have antioxidant and anti-inflammatory properties.

Whip up a batch at the weekend for the week ahead or pop them in the freezer.

Makes: 15 balls
Time: 20 mins

Ingredients
170g walnuts
17 medjool dates
100g raw cacao powder (or cocoa powder)
pinch of salt (to enhance the flavour of the cacao)
60 - 120g cashews

  1. Place the walnuts in a food processor and blend until finely ground (40 secs depending on blender).

  2. Add the cacao powder and salt to the processor and blend until combined.

  3. Remove the stone from the dates and whilst the processor is running, drop the dates one at a time into the processor through the tube feeder. Once combined the mixture will appear like crumbs but will stick when pressed together.

  4. Add the cashews (60-120g) to the brownie mixture and process until combined.

  5. Roll into 15 balls and store in the fridge for 5 days or in freezer.
