Sprouts....You either love them or you hate them. Don't want to roast your sprouts? Why not try our shaved brussel sprouts with pine nuts and chestnut recipe.
50gms cooked chestnuts
200gms brussel sprouts
50gms packet pine nuts
salt to taste
pepper to taste
olive oil or rapeseed oil
1) Shred Brussel Sprouts with a knife if you have mad skills, a mandoline or shred in food processor.
2) Heat your empty pan till it is hot and then add a good glug of oil to cover the base of the pan and add the chestnuts. Turn them quickly in the hot oil and then increase the heat and tip in the brussel sprouts and follow with the pine nuts. Salt generously and turn in the hot oil. Let some of the sprouts brown on the base before turning over. Browned sprouts are sweeter so don't move it as fast as a stir fry but also don't burn it!
3) Once sprouts have collapsed and cooked to your liking serve while hot.
